Sugar-free Keto Brownies

Sometimes spring takes her time getting here and it's just too cold to go outside. If all you want to do is cozy up on the sofa with a fluffy blanket and eat chocolate then why not make the treat be brownies? Since we aren't moving as much and and trying to be healthier, why not make them sugar-free? Well, maybe I did! These brownies taste just as good as the real thing, you won't be able to tell a difference. The xanthan gum adds just enough of a bind to fool you into thinking there's wheat flour and the Swerve has just enough sweetness, too. Until warmer days, enjoy!


Ingredients:

1/2 cup (1 stick) butter, melted
2 large eggs, room temp
1 tsp vanilla extract
1/2 cup granulated Swerve
1/2 cup almond flour
1/3 cup unsweetened cocoa powder
1/4 tsp Xanthan gum
1/4 tsp baking powder
1/2 tsp ground cinnamon
pinch Himalayan pink salt
1/4 cup sugar-free milk chocolate chips
1/4 cup chopped pecans
avocado oil (for pan)
1 tsp confectioners Swerve


Supplies:

Large mixing bowl
Medium mixing bowl
Whisk
Measuring cups
Measuring spoons
Rubber Spatula
8x8" Baking dish
Small sieve


Directions:

In a large mixing bowl, melt butter in microwave. Add eggs, vanilla, and granulated Swerve, and whisk until combined. In medium mixing bowl, whisk together almond flour, cocoa powder, xanthan gum, baking powder, cinnamon, and pink salt. Add dry ingredients to wet ingredients and mix until smooth. Stir in pecans and chocolate chips. Spray avocado in baking dish to prevent sticking, and pour batter into pan, smoothing with rubber spatula. Bake 25 minutes at 350 degrees or until toothpick inserted in middle comes out mostly clean. Let cool 5 minutes and cut into squares. Sprinkle the top with confectioners Swerve by using the sieve and tapping to sprinkle.


Tips:

Use any type of nut such as macadamia or walnuts. Melt sugar free chocolate chips to make a drizzling sauce. Top with sugar-free ice cream.
