Parmesan Taco Shells
One ingredient is all you need to make magic happen. Keto has become the reigning diet in our household. Just eating healthier all around, really. So, we're finding creative ways to pack in nutrients, flavor and have satiating foods. We used these shells and filled them with mashed avocado with lemon juice and Himalayan pink salt for a quick and healthy brunch.
Parmesan cheese
(Yes, it's that simple!)
Cheese grater or micro-zester
Measuring cup
Small non-stick skillet
Spatula
Use cheese grater or micro-zester to grate about 2 cups Parmesan, or use already grated cheese. Heat a small skillet over medium-low heat, sprinkle about 1/2 cup of cheese into a circle in an even layer around the bottom of the pan. The cheese should cover the pan enough to not see any gaps. Cook about 2 minutes on first side. Use a spatula to carefully flip and cook another 2 minutes. Both sides will be lightly browned and crispy. Slide shell from pan into a plate and fold over into a taco shell shape, leaving an opening for fillings. Makes 4 large shells.
If you are having problems with the cheese sticking, spray your pan lightly with avocado oil. We've made eggs and bacon for breakfast, and even ground beef and salsa for dinner using these and they're always a hit!
