Smoked Gouda Roasted Garlic Cauliflower Mash

I've never made mashed cauliflower from scratch before but will definitely be doing it again! I usually grab a packet of ready made riced cauli and use the blender to make into a mash. This method is foolproof and oh so easy, we can have it more often. 

Ingredients:


1 head cauliflower
2 cloves roasted garlic
1 Tablespoon heavy cream
Smoked gouda about 2 ounces 
Sea salt and ground pepper to taste

Supplies:

large Pot
Colander
Immersion blender or standing blender
aluminum foil

Directions:


Boil the cauliflower in salted water for 10 minutes, drain well. To make roasted garlic, wrap whole peeled garlic cloves with a splash of olive oil and a sprinkle of sea salt in aluminum foil, broil 10 to 15 minutes until fragrant. I already had my steaks going with some garlic roasting, so I tossed a couple of cloves of roasted pieces into the cauli pot, added a splash of heavy cream, smoked gouda, and salt and pepper. Used an immersion blender to smooth it all out and mixed with a spoon. Garnished with dried chives.

Tips:


Don't forget about the riced packets, they do make this a breeze, but I find that microwaving the packet and boiling the cauliflower myself to be about the same amount of work.
