Best Damn Kale Salad

I used to think kale sucked. Like bottom of the barrel, why would anybody eat that, sucked. A bag of ranch flavored kale chips had me convinced I never wanted to touch that green crap again! Juiced kale wasn't much better, no matter how much fruit you added to hide the flavor. For awhile I had a meal delivery service and they majorly changed my mind. I could tolerate cooked kale; wilted down to a pile of garlic flavored greens. Then I came across a local restaurant with my significant human bean and he raved about how much he loved this kale. So, I challenged myself to recreate his favorite kale salad at home. The only bad part? Mine came out better!


Ingredients:


10 ounces chopped kale, remove all stems and rinse
2 tablespoons olive oil
3 cloves garlic, minced
1/4 cup fresh grated parmesan
Juice of 1/2 lemon
1 teaspoon capers in white wine, lightly crushed
Sea salt and fresh ground pepper to taste



Supplies:

Large mixing bowl
Whisk
Cheese grater
Knife
Cutting board




Directions:


Combine all ingredients in a large bowl and whisk together or lid and shake. Easy as that!

You can top with parmesan crisps, croutons, chicken or just eat it as is!






Tips:


My first attempt at this salad, I didn't think to remove the remaining stems. You definitely don't want to skip that step. They're just far too woody and tough too eat. Try it with grilled chicken breast, crumbled bacon or a tender sliced sirloin.
